The jabara is a citrus fruit somewhat similar to a yuzu (citron), a daidai (bitter orange) or a kabosu. Juicier than a citron, it has a different flavor from a citron or a sudachi, and a characteristic smoothness that balances sweetness and acidity. The name comes from its association with purifying the spirit, and the fruit has been an indispensable part of local New Year's cooking since ancient times. Jabara are not cultivated anywhere other than Kitayama, and are called ""the magic fruit.""
